How do trucking companies get away with ‘Not responsible for damages’ signs on their trucks?

I’ve seen dump trucks with signs saying they’re not responsible for broken windshields and the like. How can that legally be so? If I put a sign on my car that says ‘Not responsible for wrecks,” does that clear me if I hit someone?
